So, depending on the story, Holmes could be anywhere from his late 20s
to 60s, and Watson could be in his late 20s to 60s as well, with Watson

Well, depending on the story it might be set anywhere in the timeline. I
think in the stories it is mentioned Watson fuzzes around the details of
his stories, so from that perspective it might easily be that nothing we
know of Holmes and Watson is really fixed.
