Is that sentence grammatical?
Is it idiomatic?

I heard it in the series "Big Little Lies".

It does not sound grammatical to me. I'd have said:
2) You know how easily she gets upset.

3) You know how badly upset she gets.
works for me. Here 'badly' modifies 'upset'.

Unless, of course, it's aiming for realistic idiomatic dialog, which
does not necessarily observe all the niceties of Standard Written
English.
