I'm seeing this a lot more in recent days, is this new correct way to refer to men and women, as nonspecific "them" "they" and "their?"

'They' as a neutral pronoun to refer to an individual is probably
commoner now, having largely replaced the conventional 'he', but it is
not new. The first example given in the OED dates from ~1350.

It's getting to be more and more common, even though many of us,
including me, consider it incorrect and don't do it.

I don't really like it either - and I find I can often avoid it by
rephrasing in the plural (each player must provide their own kit -> all
players...).

Yes. A great many (not all) awkward sentences with singular "they" can
be made less awkward by putting them in the plural.
