Nouning adjectives is nearly always possible when you are listing, and that
is a definite.

Consider my son who is issuing invites to his wedding to people from all over
the world. Planning for numbers, he will have people who are possibles, people
who are probables, but we are a definite.

Would it be understood? Yes.

Is it a great idea? Not to me.

I would say "Planning for numbers, he will have people who are
possible, people who are probable, but we are definite."

I would also say "Consider my son who is issuing invitations to his
wedding..."
